Curried Honey Chicken a la Ivy Blossom
1/4 cup butter (yeah baby)
2-3 tbsp mustard
1-2 tbsp honey
1 tsp curry power
4 boneless skinless chicken breasts
Pre-heat oven at 350 F. Mix first four ingredients in a saucepan while bringing them to a boil. Measurements are completely approximate. lay out chicken in a disposable pan. (those little 'biscuit trays' are perfect.) I got thai cut chicken accidentally and now I would suggest it, frankly. Pour the butter mixture over the chicken. (Four four chicken breasts, I use two trays.) make sure they're well coated. Stick them in the oven. So away for roughly an hour.
When you've got about fifteen minutes to go, get a cup of water, and a cup of basmati rice. pour both into a corningware dish with a lid. Put lid on dish. Put dish in the microwave for 12 minutes at power level 6. Wait.
when the microwave beeps, pull the dish out of the microwave, and the pans out of the oven. Put rice on a plate. Put chicken on top of it.
Easy cheesy.
